Handling during pre- and post-slaughter conditions can affect the quality and safety of meat. An experiment was conducted to compare slaughtering with or without a state of consciousness on Longissimus dorsi muscle's proximate composition, cholesterol content, fatty acid profile, and storage quality (pH, microbiology, and thiobarbituric acid reactive substances (TBARS) value) in Korean Hanwoo finishing cattle (KHFC). Twenty-four KHFC (three replications of four animals per replicate) were slaughtered following two methods: (1) SSUC: slaughtering by applying captive bolt stunning, brain disruption, and neck cutting with the animal in an unconscious state; and (2) SSCS: slaughtering by applying captive bolt stunning, without brain disruption, and neck cutting with the animal in a conscious state. General carcass traits, proximate composition (exempting higher ash content), and cholesterol content of the Longissimus dorsi muscle did not differ between slaughter treatments (SSCS vs. SSUS) (p > 0.05). The total SFA, UFA, PUFA, and MUFA values did not change for those subjected to different slaughtering types; however, some particular SFA values, namely lauric, myristic, and myristoleic acid, were diminished for the SSCS method as compared with the SSUC method (p < 0.05). The Longissimus dorsi muscle's pH value was elevated (p < 0.05), the microbial population tended to be diminished (p < 0.10), and the TBARS value was suppressed for the SSCS method relative to that of the SSUC method during 2 weeks of storage (p < 0.05). Thus, compared with the SSUC method, the SSCS method ensured splendid storage quality with some positive influence on the proximate composition (total ash content) and fatty acid profile (some specific saturated fatty acids) of the Longissimus dorsi muscle of KHFC.

This study aimed to evaluate six unconventional feed resources of Bangladesh, including water hyacinth (Eichhornia crassipes), banana leaves (Musa paradisiaca), roadside grass (Stenotaphrum secundatum), bamboo leaves (Bambusa vulgaris Scrad), Seaweed (Hypnea sp.) and sugarcane bagasse (Saccharum griffithii). Evaluations were based on dry matter (DM), crude protein (CP), crude fiber (CF), neutral detergent fiber (NDF), acid detergent fiber (ADF), ether extract (EE), ash content, DM and OM digestibilities and fractional rate of degradation. Two conventional feeds, i.e., rice bran and german grass, were used as the positive control. Samples (400 mg) were incubated with rumen liquor in an in vitro fermentation chamber at 0, 6, 12, 24, 48, 72, and 96 h for the degradation kinetic studies. The CP contents of 10.13, 10.63, 10.21, and 8.49 % were found in seaweed, banana leaf, water hyacinth, and bamboo leaf, respectively. The NDF values ranged between 16.5 and 75.6% and ADF varied from 9.7 to 58.8% in this study. The highest value of NDF (75.6%) and ADF (58.8%) were found in sugar cane bagasse and the lowest value of NDF (16.5%) and ADF (9.7%) were as observed in seaweed. However, higher DM degradation (33.5-42.8%) was found in seaweed during the incubation periods of 24-96 h. A significant (P < 0.05) increased of OM degradation (44.9%) compared to other feed resources was also observed in seaweed at 96 h of in vitro incubation. Water hyacinth, banana leaves, german grass, and sugarcane bagasse had greater DM digestibility (32.9-36.3%) compared to roadside grass, bamboo leaves, and rice bran (24.8-29.1%). The higher total OM digestibility of seaweed found (>44.9%) can be associated with the presence of large quantities of fraction b (>39.2 %), resulting in moderate amounts of undegradable fraction (U) (57.2 %). This study provides a comparative estimate of ruminal DM and OM degradation characteristics for seaweed and some other unconventional feed resources, which might be helpful for their inclusion in the diet according to the ruminally undegraded to degraded DM and OM intake ratio.

Traditional medicinal plants (TMP) are considered valuable alternatives to hazardous synthetic chemical utilized as animal growth promoters. This study aimed to evaluate effects of dietary supplementation of seed and leaf powder (75:25) of three Bangladeshi TMP viz. Emblica officinalis Gaertn., Terminalia bellirica Gaertn. Roxb., and Terminalia chebula Retz. on growth performance, digestibility of nutrients, hematological indices, immune index and antioxidant status in post-weaned bull calves. Dietary treatments: TMP1 (basal diet = green grass + concentrate), TMP2 (basal diet + 0.5% mixture of seed and leaf (75:25) of E. officinalis Gaertn.), TMP3 (basal diet + 0.5% mixture of seed and leaf (75:25) of T. bellirica Gaertn. Roxb.), and TMP4 (basal diet + 0.5% mixture of seed and leaf (75:25) of T. chebula Retz.). Supplementation of TMP significantly (p < 0.10) improved weight gain without affecting digestibility. Hematological indices did not change much by treatment of TMP except for enhancement of monocyte (p < 0.10) and platelet percentage (p < 0.05). A reduction in IGF, enhancement (p < 0.05) of lymphocyte proliferation, and IgG were recorded in TMP2, TMP3 and TMP4 compared to TMP1. Decreasing (p < 0.05) trend of interleukins-1 and 6, and an elevation of TNF-α and antioxidant status were recorded in the TMP2, TMP3, and TMP4 in comparison to TMP1. An elevated level of total antioxidant and glutathione peroxidase activities were found in calves treated with TMP2, TMP3, and TMP4 (p < 0.05) relative to TMP1. Taken together, our results indicate that supplementation of feed with Bangladeshi TMP promoted growth and some health indices like immune-advocating efficacy of post-weaned bull calves.

With an emphasis on the global meat market and considering the ritual requirements and quality aspects, four types of slaughtering treatments were compared: (1) NSHS (without electrical stunning, halal neck cut, and subsequent bleeding for 180 s), (2) LSHS (electrically stunned at 250 mA for five seconds, halal neck cut, and subsequent bleeding for 180 s), (3) MSHS (electrically stunned at 500 mA for 10 s, halal neck cut, and subsequent bleeding for 180 s), and (4) HSHS (electrically stunned at 1000 mA for 20 s, halal neck cut, and subsequent bleeding for 180 s). Four hundred 36 day-old Ross 308 broiler chickens (body weights of 1.4 to 1.8 kg) were divided into four random groups of 100 birds each (ten replicated pens of ten birds). This study examined the livability, bleeding out, Pectoralis major and Flexor cruris medialis proximate composition, cholesterol content, fatty acid profile and post-mortem pH, microbial loads, and oxidative stability. The livability and bleeding out were higher in NSHS and LSHS than MSHS and HSHS (p < 0.05). The Pectoralis major and Flexor cruris medialis proximate composition, cholesterol content and fatty acid profile, post-mortem pH, and microbial loads were unaffected by the slaughter treatments (p > 0.05), but the oxidative stability of Pectoralis major differed during the eight-day post-mortem period (p < 0.05). The results suggest that for capturing the global meat market, the meat industry can consider NSHS and LSHS because the ritual requirements are fulfilled, and there is no negative impact on the nutritional aspects.

The effects of diets supplemented with four levels (0%, 0.5%, 1.0% and 2.0%) of pomegranate by-product (PB) on meat composition, fatty acid profile and oxidative stability of broiler meat were evaluated. The crude protein and moisture contents increased, whereas ether extract in breast and thigh meat and cholesterol in breast meat decreased in response to dietary PB supplementation (p<0.05). In breast and thigh meat, the sum of saturated fatty acids was lower, while the sum of mono-unsaturated and n-3 fatty acids were higher, alongside lower n-6/n-3 ratio in the 1.0% and 2.0% PB supplemented group (p<0.05). The TBARS values and pH of breast and thigh meat were reduced in the PB supplemented groups (p<0.05). Overall, the results presented herein indicate that supplementation of diets with up to 2% pomegranate by-products improved the meat composition, fatty acid profile and reduced lipid oxidation of broiler meat.
